Lori’s Classic Meatloaf

A comforting and hearty meatloaf made with ground beef, onions, and bread crumbs, bound together perfectly with eggs for a classic family favorite.

Ingredients
  

  • 1 lb ground beef
  • 1/2 cup bread crumbs
  • 1 large onion, finely chopped
  • 2 eggs
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Instructions
 

  • Preheat oven to 350°F (175°C).
  • In a large bowl, combine ground beef, bread crumbs, finely chopped onion, and eggs.
  • Add salt and black pepper, then mix everything gently until just combined—avoid overmixing to keep the meatloaf tender.
  • Shape the mixture into a loaf and place it in a lightly greased loaf pan or on a baking sheet.
  • Bake in the preheated oven for about 60 minutes, or until the meatloaf is cooked through and the internal temperature reaches 160°F (70°C).
  • Let the meatloaf rest for 10 minutes before slicing and serving for best texture and flavor.
